Hake in Beer Batter

Sean loves fish and chips and is quite the connoisseur of the fish and chips that they serve in the restaurants in our area that he goes to. He is quite particular about how the batter should be and the fish and the chips etc. He really like this one so we have made it quite a few times. It is so easy especially since we always have some sort of frozen fish in the freezer and potatoes.
I have no idea what Hake is so I used Sole one time, snapper the next and haddock another time. They all worked really well. I did not serve it with “mushy peas”as Gordon suggests, but rather with a broccoli dish and with chips etc. I have served the chips with Beef tenderloin as well and Belle Loved it. Actually I also served it with Bobby Flay’s Mesa Burger as well and although I did make the Southwest fries (nobody raved about these) when I made Julia Burgers with these fries, Belle was extremely happy. I need a new deep fryer as mine is not working right. They are wonderful and SAFE things to have in the kitchen. I am really rambling here and way off topic. Sorry , I just love to cook and love to experiment. I have a terrible camera and forget to take pictures which is vital to having a cooking log. I will attempt to do better and look into a better camera. Any suggestions??? Remember I am in Canada.

Hake in Beer Batter
adapted from Gordon Ramsay’s “Great British Pub Food”

4 fish fillets (any white fish works best)
1/2 cup all-purpose flour
1/2 cup rice flour
2 tsp baking powder
sea salt and freshly ground black pepper
2/3 cups of beer (a light ale is suggested and I used light lager)
3 tbsp vodka
1/3 tsp organic honey
vegetable oil for deep frying

  1. Mix the flour, rice flour, baking powder and a good pinch of salt and pepper in a large bowl.
  2. In another bowl mix the beer, vodka and honey.
  3. Pour the beer mixture into the center of the flour and whisk to combine.
  4. Cover and let stand for 1 hour.
  5. Heat the oil in a deep fryer to 395 degrees F.
  6. Coat the fish fillets with the batter and deep fry for 4-6 minutes (until golden).
  7. Remove with a slotted spoon and place on paper towels to absorb the excess oil.
  8. Serve with chips and a veggie.

Fish and Broccoli

I forgot to add the chips before I took the picture but I will post the chips recipe soon. Really easy, just double frying is the secret.

The other pieces of fish were bigger. This was a smaller portion.
