Meatballs with Fresh Basil and Sweet Chili Sauce

Meatballs with Fresh Basil and Sweet Chili Sauce
adapted from asianappetizers by Vicki Liley

2 lb lean ground beef
6 tbsp Thai red curry paste
6 cloves of garlic, pressed
3 tbsp fresh basil, chopped
6 tbsp fresh cilantro, chopped
6 red Thai chilis, deseeded and finely chopped
3 tsp organic soy sauce
3/4 cup bread crumbs
oil for frying
Thai sweet chili sauce for dipping

In a large bowl combine the beef, curry paste, garlic, basil, cilantro, chili, soy sauce and bread crumbs.
Wet your hands and mix it up really well.
Shape into small meatballs and place on  baking sheets.
Heat the oil in a large skillet and working in batches cook the meatballs for 2-3 minutes.
Remove with a slotted spoon and place on paper towels to remove the excess oil.
Serve with Sweet Chili Sauce.

Thai meatballs

Okay, so the picture is not that great but we went through a lot of them do they must have tasted okay! I can’t believe I forgot to put out the Sweet Chili Sauce for them. They got eaten anyway but I am sure they would be better with the sauce( I am having the few leftovers tonight and will have them with the sauce.) It never fails, I always forget something.  Now I am thinking next month might be Persian or Middle Eastern. One of my black belt Aikido students gave me a Persian cookbook for Christmas and I am dying to get into it. So next month, anyone in the GTA (Greater Toronto Area) or beyond (we will pick you up at the airport) please plan on attending our next Open House Saturday Dinner with a Middle Eastern Theme. I have never cooked this style so it will be a challenge and an adventure for us all. My family will be my guinea pigs for the next month as I experiment.

    I should have told people about the new blog but I have been busy, moving my dojo, cooking, homeschooling Dylan and trying to find the time to visit everyone else’s blog. I think the days are getting shorter. There use to be 24 hours in a day, now it seems like I have barely 8.
