Quiche with Greens

Of course this is a vegan quiche and a pretty good one. The recipe calls for ‘greens’ and for this one I have used Kale. Kale is a super food, probably the healthiest vegetable on the planet.

Kale is low in calorie, high in fiber and has zero fat.
Kale is high in iron. Per calorie, kale has more iron than beef.
Kale is high in Vitamin K.
Kale is filled with powerful antioxidants.
Kale is a great anti-inflammatory food.
Kale is great for cardiovascular support.
Kale is high in calcium. Per calorie, kale has more calcium than milk.
Kale is high in Vitamin A
Kale is high in Vitamin C

Quiche with Greens

1 pound extra-firm tofu
1 tsp onion powder
1 tsp garlic powder
1/2 tsp turmeric
1/2 tsp salt
1/4 cup nutritional yeast
1/4 cup cornstarch
1 1/2 tbsp Dijon mustard
1 tbsp lemon juice
4 cup fresh kale, chopped (or any type of greens)
1/4 tsp red pepper flakes

1. Pre-heat oven 350 degrees F., Spray a 9″ pie dish with vegetable spray.
2. Place everything except the kale in a food processor and process until smooth.
3. Add Kale (or other greens) and place in prepared pie dish, smooth it over.
4. Bake 30-40 minutes (check with toothpick for a clean center)
5. Let cool 10 minutes and enjoy.
