Spicy Smoky Barbecue Ribz

This is another great recipe from Party Vegan by Robin Robertson. I love all her recipes from Planet Vegan and Party Vegan and everything else in between. You can make the recipes right out of the book with little or no changes and they are perfect. I like to make small changes and sometimes large changes based on my families taste preferences but not because the recipes don’t work just by themselves.

This was also my introduction into seitan. I had talked to other vegans, and they all said seitan was tasteless and just plain awful. I have a feeling they use store-bought seitan. I have made two different seitan recipes from her book, the rib recipe and the southern fried seitan, and they were both perfect. I think the secret to good seitan must be the flavoring and spices you use when making it. I would’ve liked to have made these ribs a little spicier but with my family I had to bring down the heat a couple of notches  to keep everyone happy.

Seitan Ribz

Spicy Smoky Barbecue Ribz
From Party Vegan by Robin Robertson

Barbecue sauce:
1 tablespoon olive oil
1/2 cup onion, coarsely chopped
two garlic cloves, minced
one chipotle chili in adobo
1/2 cup tomato paste ( 1 5.5oz can)
3 tablespoons light brown sugar
2 teaspoons soy sauce
1/2 teaspoon smoked paprika, hot or sweet
1/2 teaspoon ground cumin
1/4 teaspoon dry mustard, hot
3 tablespoons apple cider vinegar
1/2 cup water

Ribs:
1 chipotle chili in adobo
2 tablespoons olive oil
1 tablespoon soy sauce
1 teaspoon liquid smoke
1 tablespoon nutritional yeast
1 1/2 teaspoon smoked paprika, suite or hot
1/2 teaspoon garlic powder
1/2 tsp onion powder
1/2 teaspoon sea salt
1 cup vital wheat gluten, wheat gluten flour
3/4 cup water

Preparation:
1. To make the barbecue sauce heat the oil over medium heat in a medium saucepan and add all the ingredients for the barbecue sauce bring to a boil then simmer for 30 min., covered.
2.  To make the ribs preheat the oven to 350°F. Spray and 8 inch baking pan with vegetable spray and set aside.
3.  Add all of the ribs ingredients to a food processor, including 1 tablespoon of the prepared barbecue sauce, and process until well blended.
4. Turn the seitan mixture onto your work surface and flatten it with your hands or a roller into a large square about 8 inches. Cut the square into slices, about rib sized and arrange the pieces in the prepared baking pan.
5. Cover the baking pan with foil and bake for 30 min.
6. Remov seitan from the oven, brush about a third of the barbecue sauce on top flip seitan over and brush again, cover with foil and bake for another 15 min.
7.  Remove from the oven brush more barbecue sauce over the seitan and bake for an additional 10 min. uncovered.
8.  Remove and serve.
