Belle had to go in for some tests today, all was perfect, but she couldn’t eat anything (the worst thing in the world for her) yesterday and today until 12:30 when she came home. I asked her yesterday what she wanted to eat tomorrow since she had to fast and would be really famished. Steak? Salmon? Julia Burgers? No she wanted a Swedish Shrimp Salad Sandwich like she has at IKEA when we go there. I thought she was well I don’t know but… crazy! So I came up with recipe and made it while she slept after we came home and served it to her in bed. She loved it. So I made another one. I will have to add this to our lunch time recipes or mid-afternoon snacks. I have not asked her how close it was to IKEA’s but right now all I care about is that she was famished and loved it. So here it is. Belle wanted it again the next day and said it was better then the one at IKEA.
Just as a side, she also had the Julia Burgers that day and again the next day. Another post.
Swedish Styled Shrimp Salad Sandwich
Inspired by IKEA’s dish but created by yours truly
3 tbsp mayonnaise
1 1/2 tbsp butter, melted
3/4 tsp organic lemon juice
1 tbsp fresh dill, finely chopped
2 tbsp red onion, finely chopped
1 cup (or a little more) salad shrimp, cooked, peeled and deveined
sea salt, ground
freshly ground white pepper
2 Slices of bread (we use whole wheat or Oatmeal – higher fibre content)
- Combine the first 4 ingredients in a bowl.
- Add the onion and the shrimp and combine.
- Season to taste with salt and pepper.
- Place half the mixture on each slice of bread and serve.
